This spring, the collaboration between Regal Palace and TEA CHÂTEAU presents a tea-focused menu. Our chef has meticulously curated a selection of exquisite dishes inspired by tea, harmoniously blending the aromatic flavours and nutritional benefits of tea leaves.
The chef prepares Chilled Slice Lotus Root with Tea Flavour in Hot and Sour Sauce, a tea-infused sweet and sour sauce with a perfect balance of flavours. The sauce is made with Jasmine Dragon Pearl tea and a special blend of sweet and sour ingredients, creating a mildly spicy and refreshing appetizer. It's a unique and innovative cold dish. Double Boiled Beef Rib in Tangerine Peels with Supreme Puer Tea Leaves that the gravy combines the perfect blend of tangerine peel and imperial Puer tea. The beef ribs are simmered for hours, resulting in tender meat infused with a subtle tea aroma and the fragrance of tangerine peel. It's delicious, aromatic, and nourishing. Deep Fried Tiger Prawns with Garlic and Tie Guanyin Tea Leaves is a classic Shanghai dish, using a modern approach for Tiger Shrimp. The dish features Tiger Prawns marinated in Tie Guanyin tea and served with crispy fried tea leaves. It offers a distinctive and delightful taste experience. Wok Fried Minced Fish Meat with Dragon Pearl Jasmine prepared using Shanghai cooking techniques, the dish showcases diced star garoupa fish cooked with crispy rice, tea leaves, red and yellow bell peppers, and other vegetables. It's a dish that is visually appealing and bursting with flavours. Smoked Chicken with Chrysanthemum and Puer Tea Leaves, Chicken is smoked with tea residue from Chrysanthemum Puer, Osmanthus Oolong, and Tie Guanyin tea leaves. The aroma of tea enhances the natural flavour of the chicken, resulting in a fragrant and light yet savoury taste. Glutinous Rice Dumplings Stuffed with Osmanthus Oolong and Honey the sticky rice dumplings are filled with Osmanthus Oolong tea-infused honey. The dumplings have a soft and chewy texture, complemented by the aromatic and rich flavor of Osmanthus Oolong tea. It's a delightful and delicious treat.
