位於自助餐中心區域的即席烹調區,顧客可品嘗是次自助餐的得意之作松露扁意粉配Avruga魚子醬。廚師會即席為客人烹調意大利麵及隨即撒上新鮮即刨,被譽為「餐桌上的黑鑽」的黑松露及Avruga魚子醬,黑松露的菌香與魚子醬的深海鮮味交纏令兩者的獨特幽香相得益彰,在口腔中縈繞不散。另一道廚師精彩推介為龍蝦三文魚籽叻沙,鮮甜無比的龍蝦及晶瑩鮮美的三文魚籽本已是絕配,主廚更特意以馬來西亞特產叻沙烹調,充滿椰奶香味的濃香叻沙令海鮮鮮味得以昇華,絕對不能錯過。要在這乍暖還寒的日子滋潤一番,花上多個小時熬製的花膠螺頭燉雞湯亦散發誘人芳香。其他豐富美饌包括泰式辣煮青口、海參蟲草花燴雞、避風塘炒帶子、香酥黃金蝦、上海豉椒炒蜆、意式番茄煮青口等。

Welcome the spring with a sumptuous seafood feast at Café on M at InterContinental Grand Stanford Hong Kong. Laid out on the spread is an essentially infinite bounty of caviar, lobsters, clams, mussels, freshly-shucked oysters, crabs, scallops and many more to showcase the authentic flavours across the globe.
Live cooking pasta station takes centre stage where guests can have their choices of pasta and sauces. To escalate the experience, chefs will showcase one of the highlights truffle linguine with Avruga caviar. Known as “Diamond of the Kitchen”, black truffle is highly coveted for its earthy and subtle aroma while the fishiness and saltiness of the tiny black pearls, Avruga caviar, has its acquired flavour to craft a tantalizing dish. Lobster and salmon egg laksa lemak is another highlight; diners will indulge in delicious lobster and salmon roe in Malaysian laksa. Not to miss is the double boiled conch with fish maw soup in this season for a moisturizing treat. Other seafood dishes include spicy Thai mussels in peanut sauce, braised sea cucumber with chicken and cordyceps flower, deep-fried scallop typhoon shelter, crab and egg white fried rice, wok-fried Shanghainese clams in black bean sauce, seafood brodetto and many more.
Alongside the impressive range of seasonal seafood dishes, the dinner buffet also features a host of tantalising all-time favourites namely freshly-shucked oysters from France, Australia and Portugal each night, Alaskan crab leg, sea prawn, Japanese sashimi and sushi, oven-roasted suckling pig as well as the much-loved Häagen-Dazs ice cream and an enticing array of divine desserts will end the dinner buffet with a perfect and sweet note.
